It was poor judgment on Gordon's part, I think, but what he should have done - had a private talk with Rock - doesn't make for good TV. I wonder if it was all Gordon's idea or if the producers had a hand in it.

The only thing I can think is that he singled out Rock because Rock was so angry over his decision with the lobster challenge. Not just angry, but really freaking out over it. That's what we came up with at Chez Sorcha, anyway. And yeah, it was definitely a "no he didn't!" moment.

I was glad to see Melissa go, not only because she's been screwing up, but because of that thing on her chin that appeared a couple shows back. I mean, dude, if that's impetigo or something contagious, she shouldn't be cooking for the public.

I must agree with Sorcha on this one. It was not a race thing but an attitude thing. (Keep in mind the British upbringing as well)I think he was trying to instill a little humility into a man he otherwise appears to favor somewhat. I think GR read Rock and knew how to get him fired up. Yeah, the method was not "chefly" but the message was clear: don't f up, you can have this thing if you keep cool.

All this time I've misheard: rather than "FU*KING DONKEY!", I thought Chef Ramsay was screaming "FU*KING DOUGHNUT!".
Maybe he has had enough of it; "doughnut" is funnier.

Wow. Anthony, you put into words what I was feeling but couldn't quite get out of my mouth. I love the show and am puzzled by all of the incomptetancies of the contestants. When you wrote "...when the "winner's" new employers/backers have to figure out what to do with a cook who couldn't hold up a fry station at a 20 seat fish house." you were dead on. Poor guys. It's not their fault.

As a Brit, I wonder what the restaurateurs who show up on the US 'Kitchen Nightmares' will think of Ramsay, if they've only seen HK. I just caught up with the fourth season via a helpful friend back in the old country, and it remains a smart, insightful look at the hard truths of running a restaurant: know your customers, know your abilities.

The best episode of the recent KN series was his return to Momma Cherri's in Brighton, which had expanded and become a success on the publicity he brought. The new, bigger location was too much for it to handle, and the quality had sunk. And you could see Ramsay thinking that he'd created a monster.

(Plus, unlike BBC America, the original C4 broadcasts aren't bleeped.)

Now, I'm going to see if I can grab a set of F-Word 3 rather than endure this shower at HK, and Ramsay's over-acting.

Nick, we have the American version of Kitchen Nightmares debuting on Thursday. I hope it shows the "kindler, gentler" Ramsay that we've come to know from the British version. I think he's gone into some New York City kitchens right off, though, so I think they're might be some first-class head-butting there right off the blocks . . .

What a farce. It is painful to watch this show and Fox should be freaking ashamed for airing it. I am rather discouraged that so many mindless sheep out there watching, think this is real.

I do know that most bloggers here know the difference and Bourdain has more or less given us the straight goods on this stupid show.

I would watch a show with Bourdain any day. At least you get honesty.

I would really like to kick the crap out of Ramsey though. What do yo all think ?

First, I think GR picked the wrong winning team - when it got down to two equally good lobster bisques, he should have picked the men's, since he specifically stated he wanted "originality and creativity." Second, I think garbage detail for all of the men was humiliating enough - why couldn't the "punishment" just be prepping both kitchens, or something else equally cheffy? And third, I think making Rock come over and empty the garbage was doubly humiliating. Not only was it an "extra" punishment, but GR demeaned a proud, good man - and a proud, good cook. It was wrong on every level, and GR should not have agreed to participate in that particularly demeaning exercise.

Also, how the hell does he think it must look, particularly singling out a black man for additional humiliation? If Gordon wants to get known enough so he could open in NYC and sustain his outpost in NYC, THAT was so not the way to do it. That was stunning insensitivity and, to my mind, the worst thing he's ever done as a chef or human being. Never mind all the screaming and cook-bollocking and being vicious to Australian food writers, etc., etc. - THIS was bad. This season's Hell's Kitchen is, like Jen, scraping at least the sides of the garbage can.

The only good thing I can say is that Gordon didn't wait for a vote - he propelled Melissa out of the kitchen. While's he's "binning" her, he should "bin" HK and stick to Kitchen Nightmares - and get some sensitivity training in the interim . . . or "bin" himself. WHY single out Rock, a cook GR has, up to this point, admired? It looked awful. And it was bad on EVERY level. Shamne on the producers for that little stunt.

Ramsey is no different than any other arse "leader" in the professional world, restaurant or otherwise. Though in the restaurant industry (ironically, "hospitality industry), this type of "leadership" is often revered, rather than looked poorly on as a cheap way of influencing. It's sad that so many aspiring chefs subject themselves to this sort of mental defilement.

In defense of this season's HK, I thought the blind taste test challenge highlighted the importance of a chef's palette in regards to creating successful original dishes. Whether what we saw on the show was "scripted" for drama, we cannot be sure, but the point of the exercise seemed valid to me.

According to the Neil Simpson biog of Ramsay (this is not a recommendation for that book BTW) it was the US producers who vetoed the higher levels of instruction and actually looking for people who could cook that were featured in the UK (celeb lead) first season. I know Ramsay deserves some stick for doing this show, but Simpson also says that most of the money goes into the restaurant biz not GR's personal coffers and at $1m for a month's work, more or less, who can blame him. I'd expect the show's paid for his NY launch.

Apparently the upcoming UK 3rd season with Marco Pierre-White will again have a strong focus on teaching and encouraging cooking skills. But MPW is only replacing GR because he backed out of the show after the 1st season to focus on his restaurants. He was replaced by Novelli and Rhodes for the 2nd season, which had pretty poor viewing numbers and the show's been off air here for a couple of years, until this MPW fronted version turns up.

Both types of show are fascinating in their own way IMHO.

I can't believe that some of these people get on these shows. I mean none of these people are fit to lick the boots of the royalty which is the real modern chef today. The chef has now graduated from the freewheeling booze swilling pirates of Bourdain's Kitchen C. to an all knowing monarchical judge of all things culinary and worldly. Man, chefs are cool! I mean the idea of a grouchy addict sweating last nights Yeager into my hollandaise is so appealing, especially when he's berating a coworker and groping waitresses. So when these geniuses of all that is culinary judge peons on TV I get all goose-bumpy with their greatness. After all, sociopaths aren't really sociopaths if they are gainfully employed. Thank god for the restaurant business to supply this outlet for them.

I like Julia.

So people REALLY think this show is real?!

1. It's a reality show. Therefore, it is not reality; it's scripted. There are writers, there are casting calls, and yes, specific types are sought.

2. It's brought to us by the illustrious carnies at FOX.

3. It's a cooking show in the same way that it's possible to dance about architecture. (Was that from Tom Wolf, or John Waters? I can never keep them straight. --but you get the idea.)

4. WWF-worthy personalities: who wouldn't watch Crying Fainting Asian Cowboy throw down with that strange bossy redheaded woman with the soul patch, both in full superhero regalia?

It all adds up to roller-derby-style entertainment, with barely-bleeped spittle-encrusted swearing. It's a total fraud, and we (HK's remaining viewers) are the fucking donkeys of the piece. And it's a particularly welcome diversion from whatever political asshattery is going on.

Top Chef, on the other hand? yaaaaaaaaaaaaawwwwwwwnn. Premise is more or less in the same ballpark. Less screaming and less food is thrown. Yet the show is only slightly more believable, and the challenges are less than gripping.

Say what you will about Iron Chef in any of its incarnations, but I do trust that the constestants on that show can actually cook. When I watch HK, TC, or whatever the Food Network's version is called, I can never sufficiently suspend the belief that none of the contestants are capable of much beyond assembling a reasonably boiled Kraft Dinner.

"And when will someone ultimately come up with shows that actually TEACH cooking, TEACH people how to select good produce and use it, TEACH people good kitchen practices, and expand their culinary horizons??"

Chris: Have you seen "Good Eats" by Alton Brown on Food Network? He does all of these things that you mention.

I read in an interview that they didn't have thermometers for the Wellington. I have to admit, I'd be lost without mine. I don't know whether they were wanting to avoid holes in the pastry or just being sadistic in withholding thermometers.
