Although she may lack confidence, she doesn't lack confidence in her knowledge of food and this has been the case in every episode. I think she's nice, too. Not sure how well regarded it is but given that it was founded by the Paris Chamber of Commerce and Industry I'm sure it's not just a fly-by-night institution! Also, I'm sure that the fact that it has English instruction makes it attractive to Americans.
