All of my kitchen stuff can burn up in a ball of fire. My cast iron, especiall one skillet which is passed down from my grandmother, is the only things I care about.

very interesting

To Joe Louthan--even if the whole house burns down, you can most likely find your cast iron in the ashes, clean and re-season it, and keep on using it another hundred years (or more!)

Unlike non-stick cookware, cast iron handles get very hot. The second-nature desire to grab pans with an unprotected hand will be unlearned very quickly when cooking with cast iron.

Looking for a cheap pan my sophmore year of college (living in an apartment with a stove) I grabbed an unseasoned cast iron for about $10 at a hardware store (I've seen that a lot of lodge is now factory seasoned). I didn't know much about cast iron, but quickly learned how to season it and use it. now almost 10 years later it is in heavy rotation in my kitchen and hopefully will remain that way the rest of my life. Couldn't agree more on that things (like bacon) were made for cast iron and look and taste great coming out of the cast iron pan. (I've since added a grill pan as well)

I never thought of this until i read your blog.

"Turn them upside down and use them as a pizza stone", this is absolutely brilliant, thank you.
